Best Date Ever!

We had a laid back weekend which was really nice. We deep cleaned our car(don’t you just love the feeling of stepping inside a clean car that you just cleaned?), visited our cousin who just had a baby girl, ate a steak dinner, went to Beto’s for some fish burritos and super nachos and went on a date.


Have I mentioned Jay got Adi and Ana these hard core wet suits? They’re supposedly #1 the best wet suits. For scuba diving you might ask? No. Maybe surfing in the ocean? Nope. Just for swimming in a kitty pool or the water parks. Intense, I know. I’m kind of bummed that they don’t get to wear cute little swimsuits that all the OTHER NORMAL kids wear(because Jay insists they wear this and this ONLY.) but oh well. πŸ˜€
Jay had planned a surprise date, thanks to Gloria for offering to babysit!
He told me right before she was about to come over and he told me he even had an outfit picked out for me. And the funny thing? I totally guessed the whole outfit and I was right! Haha, oh man I know him too well. And of course he planned it so that he could be matchy matchy with me. I remember he used to always try to match me even when we were broken off and just friends and I used to get so embarrassed(he later told me it was his way of telling all the other guys that I was his.) but now I kinda find it adorable.

We were dominating all our games.



So there was this game I forget what it was called but this girl was trying to get one more slot to get the bonus and she played forever hoping to get the bonus but never did so she quit. So I went over and put ONE nickel in and guess what? I got the bonus! It only took me ONE try! And to top it off, I got the highest bonus possible which was 100 tickets and I was jumping and screaming, so happy when I glanced over and the girl was starring at me. I tried to reserve my excitement but I couldn’t, I just gave her a big grin and kept jumping and screaming. Maybe I should’ve shared my tickets with her?
Nah.

1338 tickets baby! We did spend $20 worth of nickels haha.

Blah Wednesday

Wednesday wasn’t the best day for me. I know you shouldn’t react to situations but instead act upon it and you have the choice to be in a bad mood or not, yaddi yaddi yadda, but it’s so hard to be in good spirits when your babies drive you crazy. They were fussy, whiny, crying every 20 mins., then making each other cry and all over again. All day long. I think Ana is getting her molars so lately she’s been more fussy. It was those days when you can’t even hear your own thoughts let alone have any time to think ANY thoughts!

So when Jay came home from work I was not in the best mood. He asked me how my day was and my exact reply was, “It’s one of those days where I HATE being a mother. The grass on the other side looks SOOOOOOOOO much greener right now.” Hahaha, what can a man say to that? But he made me feel better within minutes and I was all better again. Oh those 0.1% moments of motherhood where you hate your job! And you envy all your friends without kids who get to do whatever THEY want all the time!

But yesterday was a great day. And almost everyday is. And just because that 0.1% is really hard doesn’t rob away from the other 99.9% but instead makes you appreciate those great days so much more. And on those days I take a lot of pictures. I think it’s because when I take a picture and look at it, it seems as if the world’s at a pause, silent, peaceful. And I realize there’s beauty all around me even during chaos. Yes, even in my kids too.

I’m not the only mother that hates it once in a small while right? If I am, then I would feel really really guilty…

Kimchi Recipe

The first time I made kimchi, it failed. It wasn’t a good recipe to begin with(so ignore my first kimchi recipe for your own sake) and I didn’t let it sit in room temperature for 1-2 days but instead put it in the refrigerator right after the making.

My goal is to make the world’s best kimchi along with the world’s best pad-thai) so I attempted for the second time. I found this kimchi video here and it’s wonderful! While watching it I realized this recipe was very similar to the one my mom used and DUH! I should’ve known, I helped her make it many times in my childhood! I didn’t use leeks or oysters but used all the rest and it turned out great…EXCEPT this time I let it sit out for too long, darn it! I let it sit out for 1 1/2 days but I think just 1 day would’ve been suffice. So it’s a little too sour right now which is actually perfect for kimchi fried rice or kimchi soup, so I made kimchi soup with it and turned out delicious. And practice makes perfect and failure means your next result will only be better right?…..RIGHT? (you better be nodding! πŸ˜‰

Kimchi Soup

1 1/2 C. sour kimchi
1/4 lb pork loin (more the better is my theory. Pork MAKES the kimchi soup.)
2 C. water
1 C. kimchi juice
1 sliced green onion
1 cup tofu (extra firm)

1 T. korean chili flakes (gochugaru)
1/2 T. korean chili paste (gochujang)
4 teaspoons soy sauce
1/2 teaspoon minced garlic
1/2 t. garlic powder
2-3 pinches of black pepper

1. Put 1 1/2 c. water in a pot to boil. In the meantime, in a pan coated with vegetable oil, fry the kimchi. Then trasnfer the kimchi to the boiling water and add pork, kimchi juice, chili flakes, paste, soy sauce, garlic, garlic powder and black pepper. Let it boil and then let it simmer for about 45-60 mins. About 10 mins. before serving, add tofu and a few mins. before serving, add the green onions.
