The art of folding dumplings

Jay told me he was craving dumplings one day, so I made some for dinner.  When he came home from work and saw what I was making, he excitedly offered to help me make some.  

Can you guess which one he folded?  I kept smiling and laughing as I was folding the dumplings, because this is how I feel when he dresses the girls.  You can tell by seeing our girls’ outfits who dressed the girls that day.  If I dressed them, it’s usually in a dress or a skirt, girly and fashionable(and cuter in my opinion ;), and when Jay dressed them, it’s always in everything cotton, basketball shorts, or an Adidas t-shirt, very plain and comfortable.  
In the beginning I used to make fun of it or make a comment about how their outfits weren’t very cute,  or when he would go to a store during his lunch break to buy some clothes for them, I would tell him how I didn’t like the clothes he bought for them, but then I realized, why am I even complaining?  I should feel very lucky and grateful that he willingly dresses the girls so many times without me asking, or buys their clothes because he wants to be that involved in their lives!  So now, when I see the girls walk out of their rooms in their Adidas t-shirt and basketball shorts, I find it absolutely adorable, and heart-melting.

Raspberry picking

We decided to pick raspberries at the spur of the moment(this is as spontaneous as our life gets now a days, we are so wild!), and we are so glad we did.  The first half an hour for me was spent on just eating the raspberries and leaving my bag completely empty while everyone else was busy filling their bags.  But I managed to pick the most(3 lbs!), and we all went home happy with bagfuls of raspberries and our bellies full of them too… until we got hungry again about 20 minutes later so we later filled our bellies with hamburgers, shakes & fries, a much healthier choice, obviously.

Summertime

We’ve been swimming a lot, and eating a lot of ice-cream this Summer.  Papa is in town for a week and the girls couldn’t be anymore ecstatic.  They’ve been his little shadow and I have to keep reminding them to give Papa some personal space.  He doesn’t seem to mind one bit though.  As for me, I am sick and feel pretty crappy(being sick sucks!), but getting pampered by my husband makes it not too shabby.

Catching up the last ten years

I went to see a friend whom I haven’t seen in about 10 years.  And now we’re both married with 2-3 kids!  The place she lived at was absolutely beautiful, with a lake surrounding all the houses.  I didn’t know places like this even existed in UT!  We kayaked and stand-up paddle boarded, and it was just so peaceful and serene.  And it was wonderful catching up with a friend I’ve lost touch with for way too long, which I’m not going to let it happen again.

Our favorite summer salad

Over the past few years, we’ve been to many gatherings where they served this spinach & strawberry salad.  It’s delicious and easy to make, so it’s become one of my favorite salads to make at home.  It tastes very refreshing and sweet, it’s almost like dessert!

Spinach strawberry salad


Ingredients:
-1 bag of ready-to-eat spinach
-craisins
-thinly sliced strawberries
-sugar-coated almonds*
-poppy seed dressing

Directions:
1. Pour spinach onto a bowl.  Top it with the rest of the ingredients according to preference, mix, and enjoy!

*to make sugar-coated almonds, melt white sugar on low-medium heat.  When the white sugar becomes liquid, pour slivered almonds onto the pan, and mix.  Quickly remove from heat and separate the almonds from sticking together.
