Thanksgiving 2013

Our favorite tradition for the last 6 years has been to go to Uncle Craig and Aunty Elaine’s for a Thanksgiving brunch every year.  But with our deal uncle passing away 4 months ago, we decided to carry on the tradition at our home every year with Aunty Elaine and her family.  We had my parents over and my uncle and aunt too, along with Jay’s brother and Aunty Elaine’s granddaughter’s friend, so it sure was a full house, just the way we like it.
I made only the homemade rolls and the green bean casserole, and Jay made the rest of the food, all from scratch.  He made two kinds of turkeys, one a regular one and the other kalua turkey, if you haven’t tried kalua turkey, you’re sure missing out!  He also made texas roadhouse style sweet potatoes, garlic & cheesy mashed potatoes and gravy, homemade stuffing with bratwurst sausages, cornbread, and haupia pie.  It was delicious.  
I tried this green bean casserole this year, and I’m never making the canned version ever again.  Nothing was from canned food, the cream of mushroom & the onion rings are all made from scratch, with fresh string green beans.  Below is the recipe in case you’d like to make it, you will be so happy you did!

Not Your Mama’s Green Bean Casserole

prep 4 ∙ cook Easy ∙ source Alton Brown

INGREDIENTS

  • 4 medium onions thinly sliced
  • 1/2 cup all-purpose flour
  • 4 tablespoons panko bread crumbs
  • 2 teaspoon kosher salt
  • Nonstick spray
  • For beans:
  • 2 lb. fresh green beans rinsed and trimmed
  • 2 gallon water
  • 4 tablespoons kosher salt
  • For sauce:
  • 4 tablespoons unsalted butter
  • 24 ounces mushrooms trimmed and cut into 1/2-inch pieces
  • 2 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 cloves garlic minced
  • 1/2 teaspoon freshly ground nutmeg
  • 4 tablespoons all-purpose flour
  • 2 cup chicken broth
  • 2 cup half-and-half

DIRECTIONS

Preheat the oven to 475 degrees F.
Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick spray and evenly spread the onions on the pan. Bake in the oven until golden brown, tossing every 10 minutes, for approximately 30 minutes. Once done, remove from the oven and set aside until ready to use.
Turn the oven down to 400 degrees F.
While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Add the half-and-half and cook until the mixture thickens, approximately 6 to 8 minutes.
Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

Chichi Textiles Giveaway

Corn starch is not an emergency!

I’ve been working so hard to not lose my patience with the girls and not sigh or grunt when they ask me to do a million things for them right after the other, and I’ve been doing really well.  But unfortunately, Saturday morning wasn’t one of them.  
Aiden was awake from 6 p.m on Friday night until 5:30 am on Saturday morning this past weekend.  I watched him until 2:30 a.m and I don’t really remember, but I guess I woke Jay up and handed him the baby, and went to sleep.  I was woken up at 6:30 am by the girls and got the girls milk, breakfast, told them not to wake up daddy and turned on a movie on the ipad for them so that I could get just a little more sleep.  I was so dang tired.  Well, between then(7 am) and until 8 am, so between those 60 or so mins., the girls woke me up 4 times.  FOUR TIMES!!!  I’ve told them to not wake me up unless it’s an emergency but apparently, finding corn starch to play with(corn starch + water makes cool effect as I’m sure you know, darn me for introducing it to them the day before) was a case of a serious emergency.  The first time I was woken up, I was asked where it was.  Second time, I had to tell them more precisely just where to find the box of corn starch and what it looked like.  You know, it has a picture of corn on the front of the box.  Third time, and by this time, you’d think I would just get up and get the corn starch for them, but I was so delirious and tired, the exertion it’d take to get my legs to stand up and walking just sounded like too much to bear, I told them in more detail just where they’d find it and what it looks like.  When I was woken up for the fourth time, I got mad at them and told them to forget about it!  Just don’t play with it if you can’t find it! 
After they left me alone, I was too mad to go back to sleep.  So I went to the kitchen to where they were and said, “Corn starch is not an emergency!  I’ve told you to only wake me up if it’s an emergency, and corn starch is not an emergency!  Do you know how tired I am?  No, because you get a good night’s sleep every night!”  I was about to cry.  By then, Jay woke up by my loud voice and he came to the kitchen as he gently grabbed my shoulders and started guiding me back to my bedroom.  “It’s okay honey, just go back to sleep.  Just calm down, I know you’re tired.  It’s okay, just go back to sleep.”  As I kept turning around to the girls to say to them, “No, they have to know that corn starch is not an emergency.  Corn starch is not an emergency, corn starch is NOT an emergency!”  
So in case you didn’t know, corn starch is not an emergency.  How was your Saturday morning? 😉

ZipBelt

My husband started his own fashion blog.  Say what?  haha, so kidding.  He’d never.  He’s sporting a belt called ZipBelt and they’re raising money for their launch.  Here is what Jay had to say about the belt:
Usually my wife is the one doing product reviews, but she hooked me up with a ZipBelt.  Traditional belts have anywhere from 5-6 holes and they are spaced an inch apart.  It’s tough to get the right fit with that kind of spacing.  Other adjustable belts come loose if you move or bend at certain angles and never seem to stay tight.  The ZipBelt provides the best of both worlds! Being very analytical, at first glance I was skeptical that the ratchets on the back of belt would hold tight, but being able to adjust the belt to ¼” inch lead to a perfect fit every time. The belt never felt that it was too tight or that it would become loose throughout the day.  The belt is very minimalist and modern in appearance, yet has just enough to either wear with a casual pair of jeans or match perfectly with a button up shirt and tie.  Recently I lost a substantial amount of weight as I was training for the St. George Marathon.  There were times when my pants never seemed to fit right and the holes in my traditional belts just never seemed to do the trick and I even got my drill out and drilled another hole in my belt to try to compromise being in-between belt holes.  I wish I had the ZipBelt back then as the spacing and fit of this belt is as perfect as it gets.  With the holidays coming up, this is the perfect gift for any guy to add to his accessories collection!  I’ve been happy to add this to my collection!

The Goldbergs

November 12, 2013~ Etc.

Hi guys.  It seems like I haven’t blogged in awhile, did you miss me? 😉  I have been insanely busy trying to be a good mom to my darling three kids and with a few emotional breakdowns here and there, I’m surviving!  Three is definitely a crowd and it seems like a party all the time with so many fun, and not so fun events happening constantly.  But three is very fun and even though I’ve never been so exhausted and busy and stressed in my life, I’ve never been happier.  
I’ve also haven’t had much desire to blog lately for some reason so I just haven’t.  Probably the exhaustion and the lack of time is the reason, but I’d rather have quality posts rather than quantity, don’t you?  I know I said I had baby carrier giveaways lined up every week, but obviously that hasn’t happened and I apologize for that.  It probably bugs me a lot more than you guys that I didn’t follow up on my words, but it’s coming.
Anyway, what I do have a desire to blog about today is THE GOLDBERG’s.  Can we just please talk about my favorite show?  

We came across this show when we were watching our tivo’ed show that airs before The Goldbergs.  It recorded a few minutes of The Golbergs afterwards and I’ve never heard Jay laugh so much while watching a t.v. show.  So I said to him, “Hun, why don’t you record the series?  You seem to like it a lot.”  He did, and we’ve been hooked ever since.  You will love it too, especially if you were born in the 80’s.  I like it better than Modern Family, gasp!  This is not a sponsored post, I am just here to make your life better.  You’re welcome guys, you’re welcome.
