so i’ve been craving kimchi lately so yesterday adi and i made some. i think i was about 8 yrs. old when i first made kimchi with my mom so adi’s way ahead of me by 5+ yrs. i think she’ll be a better cook than i am when she grows up!
this was my 3rd time making kimchi on my own and they say 3rd time’s the charm and i gotta say, they(whoever you are) are right. i could eat a bowlful of it just plain! haha is that gross?
so here is how you make kimchi. don’t be scared, it isn’t that bad!
you need:
•2 medium size napa cabbages and 1 Korean radish
•salt, sweet rice flour, sugar, water
•4- 6 cups of hot pepper flakes
•fish sauce, white onion, fresh garlic, ginger
•green onions, fresh oysters (both optional)
4. mix 1/2 c. sweet rice flour with 3 c. water. bring to boil. it should thicken like this.
then add 1/4 c. sugar and mix. let it cool.
5. mix 1 c. of fish sauce into the rice flour mixture.
6. blend together 1 onion, 1 c. garlic, 1- 1 1/2 T. ginger.
let it sit in room temperature in closed container for about 2 days

I love your idea of trying make kimchi at home!(b/c some people just are very intimidated by all the steps and so hehe) I do make my kimchi sometimes at home and I have to say they are way more superior than any of those store-bought ones!(No MSG!!!)
I have to wonder though why you would say "you don't love Korea?" Just curious~(Maybe you like Korea but not love? hehe just being silly here~) Have a great weekend!

@jin: I love the people, the culture, but not the environment. It seems to me like it's very worldly, materialistic, and shallow, only caring about status, money, and how you look. Maybe I should write a post and expand more later. 🙂 haha but I sure love to visit to eat n shop though! 😉

Thank you SOOOO much for the recipe for ggakduki! I have been searching for one that is simple to make after having it at a local place that went out of business!
I can't wait to try it out at home!

I'm drooling over here! I'm half Korean, and my mom insists on having kimchee and rice with every meal. My middle daughter LOVES it too.

Yum! That looks so much easier than I expected. I moved to Korea in February and it really is everywhere! I like the regular stuff fine, but radish kimchi is my favorite!
