If you remember my Fun Family Day Inspirations post, I talked about counting down the days until school starts for the sake of my kids and myself! I also talked about the games I’d play and the snack we’ll eat afterwards to get out of this Summer-rut. We had a fun family day right before school started and it was so fun. Nothing extravagant but very simple easy games and snacks you can make with the items you already have at home. I always say it’s not the extravagant or expensive outings that the kids will remember, it’s the simple moments and the relationships you’ve built with your children that they’ll remember the most. One of the many things I love about little kids is that they take such delight in such simple things! It helps me to appreciate the simple things in life more and not take it for granted.
I made Jupiter Fruit, also known as “Jellin’-Melon” Snacks and it was a huge hit with the kids. But I do have to admit that I messed up and didn’t cut the melon lengthwise and I didn’t scrape off the melon to be only 1′ inch thick, so it doesn’t look as pretty as it’s supposed to be. Haha, mommy fail! But it happens to all of us once in awhile right? And luckily, the kids didn’t even know I messed up the recipe, they thought it was the coolest thing! Mommy win! π
- 1 honeydew, cut lengthwise in half
- 3/4 cup boiling water
- 1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
- 1/2 cup cold water
1. Remove seeds from melon halves; cut thin slice from bottom of each half. Scoop out melon flesh, leaving 1-inch-thick shells. Place upside-down on paper towels to drain.
2. Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 15 min. or until slightly thickened. Pour into melon shells.
3. Refrigerate 3 hours or until gelatin is firm. Cut each melon half into 4 wedges.

What a fun day for your kids! And I think the melon looks awesome. Kids are never as picky about food's looks as we are, so if they thought it was cool, that's all that matters π
